We are delighted to welcome back Ursula Ferrigno to teach a course based on one of her specialities – cooking with fish. As well as being light and digestible, fish is a wonderfully nutritious alternative to meat. Whether you are wanting to add more fish dishes into your weekly repertoire or simply learn some new dishes that celebrate the magnificent flavours that fish offer, this is the course for you.
Ursula will teach you how to make the best confit and fish stock, pass on her hints and tips for successfully smoking, brining and poaching fish and most importantly give her advice how to select your fish.
The menu will include:
- Home smoked white fish dip
- Halibut Catalan – a Mediterranean classic that can also be made with hake
- Confit of trout with pickled cucumber and minted labne
- White fish with agrodolce – a sweet and sour Sicilian classic
Dishes to enjoy with relish – sure to find a place in your regular home menu!
