Honesty Cookery School
We are delighted to welcome back Ursula Ferrigno to teach a course based around one of her specialities – cooking with fish. Fish offers a light, digestible and nutritious alternative to meat dishes.
This course celebrates the magnificent flavours that fish offer. You will learn how to make a confit, a fish stock, and the best ways to smoke, brine and poach fish successfully. Ursula will talk you through how to select the best fish and a no waste approach to cooking with fish.
The menu will include:
- Smoked white fish dip
- Halibut Catalan – a Mediterranean classic that can also be made with hake
- Confit of trout with pickled cucumber and minted labne
- White fish with agrodolce
Dishes to enjoy with relish – sure to find a place in your regular home menu.
