Mariella returns to the cookery school with a the first in a series of courses taking you on a tour of the regions of Italy and their culinary specialities. We are delighted to kick off the series with some mouth watering dishes from Bologna and Emilia Romagna.

The course will begin with gnocco fritto and streghe served with cured meats and cheeses –  a delicious appetizer typical of Emilia Romagna. Moving onto Bologna renown for its tortellini, fresh pasta in general, and of course the ubiquitous Bolognese sauce. Mariella will teach you the traditional Bolognese ragout and fresh pasta recipe so you can put together the best lasagna you will ever taste! A course focusing on Bologna wouldn’t be complete without a radicchio dish – you will learn to prepare radicchio tardivo, perfect enjoyed as a side dish or a risotto ingredient. And for pudding?  Sample the torta degli addobbi (a traditional rice and custard cake beloved of the region) and learn to make an indulgent chocolate ‘tile’ the Mattonella.

The epitome of Italian comfort food – perfect dishes for a long lazy meal on a Winter’s day.
