Salad Dressings

A good dressing can transform a salad. A bad one can ruin it. Salad leaves have traditionally been dressed to make them more palatable, easier to eat. Experiment with some of these, depending on your salad ingredients. The tahini dressing goes well with a Greek style salad and meat, whilst the soy and sesame dressing is probably better with rice or noodles. Let me know what you think.

  • 10g tahini paste
  • 45g water
  • 15g lemon juice
  • 30g extra virgin olive oil
  • salt and pepper

  • 30g soy sauce
  • 30g sesame seed oil

  • 45g extra virgin olive oil
  • 8g white wine vinegar
  • 6g Dijon mustard
  • salt and pepper
  • For Olive oil and herb
  • 45g extra virgin olive oil
  • 10g chopped flat leaf parsley
  • 1 clove of garlic crushed
  • salt and pepper
  • For Yoghurt and mint
  • 45g natural yoghurt
  • 10g chopped fresh mint
  • 15g extra virgin olive oil
  • salt and pepper

Prep: 5 - 10 mins
Cook: Let them sit in the refrigerator for at least 30 mins before serving

Serves: 4-6 servings of salad

Method

Step 1

1. Tahini and Lemon Dressing: In a bowl, whisk together 10g tahini paste, 45g water, and 15g lemon juice until well combined. Slowly drizzle in 30g extra virgin olive oil while continuing to whisk the mixture. Season with salt and pepper to taste.

Step 2

2. Soy and Sesame Dressing: In a bowl, combine 30g soy sauce and 30g sesame seed oil. Whisk the ingredients together until well mixed. Season with salt and pepper to taste.

Step 3

3. Classic French Dressing: In a bowl, whisk together 8g white wine vinegar and 6g Dijon mustard. Slowly drizzle in 45g extra virgin olive oil while continuing to whisk the mixture. Season with salt and pepper to taste.

Step 4

4. Olive Oil and Herb Dressing: In a bowl, combine 45g extra virgin olive oil, 10g chopped flat leaf parsley, and 1 clove of crushed garlic. Whisk the ingredients together until well mixed. Season with salt and pepper to taste.

Step 5

5. Yoghurt and Mint Dressing: In a bowl, whisk together 45g natural yoghurt, 10g chopped fresh mint, and 15g extra virgin olive oil. Continue to whisk until the ingredients are well combined. Season with salt and pepper to taste.
