Our Strategy for Reducing Food Waste through Education
Romilla ArberAt Honesty, sustainability is managed as a core operational objective. Founder Romilla Arber has established a clear directive for the group: the aim is zero waste. Currently, this involves ensuring that no waste from our sites goes to landfill and using platforms like Too Good To Go to manage daily surplus.
A significant portion of food waste in the UK occurs in the home. A heavy reliance on ultra-processed products has meant that we have lost a lot of knowledge in the kitchen about how to manage ingredients, meal plan and eliminate waste. With long ‘shelf life’products we have been encouraged to bulk buy resulting in waste .By returning to "Real Food," we can significantly reduce the environmental footprint associated with industrial processing and packaging.
Building Skills at The Barn
Education is a primary component of our sustainability strategy. When we understand how to handle ingredients, we produce less waste. Our cookery school at The Barn offers several courses specifically designed to help students learn how to be more sustainable in the kitchen.
- Sourdough Made Easy: This course covers the maintenance of a sourdough culture. Students learn how to use the "discard" from the fermentation process and how to incorporate every part of the loaf into their daily meals, reducing the reliance on plastic-wrapped, processed bread.
- Chicken – The Next Steps: Purchasing whole birds is more sustainable than buying individual, pre-packaged portions. This class teaches the technical skills required to break down a chicken and use the remaining carcass for stocks and soups, ensuring total utilisation of the animal.
- Dinner in a Dash: Delicious, healthy, easy-to-prepare recipes, plus tips on meal planning, creative leftovers, and time-saving cooking techniques to reduce weekday stress.
Operational Transparency
Sustainability at Honesty is about making consistent, practical changes. While we continue to audit our packaging and refine our internal logistics, we also aim to provide our customers with the tools to reduce waste in their homes.
