The beauty of Aegean cuisine is that it is both healthy and light yet absolutely delicious. These fertile lands famous for olive oil and variety of fresh fragrant herbs, these foods are healthy and healing. The Jewish, Greek and Ottoman communities swapped recipes and created new dishes that eventually become regional classics.

I will be teaching how to balance spices and herbs with fresh vegetables and meat to produce a delicious and healthy meal. This course is perfect for lovers of Mediterranean food and healthy eating.

 You will learn to cook:

  • ‘Taratorlu eksileme’ – Tender green beans, juicy tomatoes with olive oil, garlic and balsamic vinegar sauce
  • ‘Gigantes yiahni me arni’ - Slowly braised butterbeans with lamb in a rich, flavourful sauce made of olive oil, sautéed onions, tomatoes and fresh herbs
  • ‘Arpa sehriye’ - Orzo pilaf cooked with lemon and oregano
  • ‘Cacik’ - Cucumber and mint dip
  • ‘Kolokithopites’ - Pumpkin/butternut squash filo pie dessert with cinnamon, honey and walnuts

After the class you will sit down to enjoy fruits of your labour with a delicious glass one wine.
