Sasi returns to the school for class on Southern Indian delicacies.  The cuisine of Southern India is known for its light, appetising dishes. Ingredients like mustard seeds, dhal, hing (asafoetida), turmeric, black pepper and curry leaves are used to give a perfect blend of flavour, colour and taste.  South Indian dishes are not just delicious but healthy, light and easily digestible.

You will learn to cook:

  • Village style chicken – an intensely flavoured Southern Indian variation on a chicken curry, served for special occasions.

  • Spinach kootu – this is made with coconut masala in Southern India which creates a lovely rich, gentle dal

  • Carrot and cucumber pachadi – the tempered spices in this cooling accompaniment give it a different flavour to the raita from Northern India

  • Chapathi – a simple flatbread staple, the perfect pairing with many Indian dishes
