Step into the ancient kitchens of Antakya (Hatay) – one of the world’s oldest culinary regions, where history, culture and flavour meet on the plate. You will discover the rich food traditions of Antakya, shaped by Arab, Anatolian, Armenian and Mediterranean influences.
Learn to prepare authentic dishes, mezze, dessert, vibrant spice blends and age - old techniques, stories behind the food and its deep cultural roots passed down through generations.
You will learn to cook:
- Mutebbel - Roast aubergine mezze with lemony tahini yoghurt topped with chilli walnuts and sesame seeds.
- Belen Tava - Chunks of meltingly sweet lamb cooked with thyme, peppers and tomatoes
- Kepse Pilav - A fragrant jasmine rice dish with carrots, raisons, cardamom and cinnamon
- Cennet camuru - Pistachio and kadaifi noodles halva desert in aromatic syrup topped with nuts and clotted cream
For lunch you will enjoy fruits of your labour, accompanied by a delicious glass of wine.
