Discover the versatility of Aval (Poha), one of South India’s most comforting pantry staples made from rice flakes. In this class, you will explore simple and wholesome ways to transform Aval into a variety of dishes that feel grounding, nourishing and deeply satisfying for everyday family cooking.
Together, we will prepare a selection of South Indian - style Aval dishes, including fragrant Lemon Aval, cooling Coconut Aval, and gently tangy Tamarind Aval. You will also learn a comforting Potato Fry or Podimas that pairs beautifully with these flavours, and an optional simple Sweet Aval with jaggery and cardamom, bringing nostalgic warmth and celebration to the meal.
Aval is wonderfully adaptable and intuitive to cook with, giving you the chance to experiment with flavours, vegetables and textures without strict rules. It teaches confidence, ease and creativity in the kitchen - helping you understand how ingredients work together, how to balance flavours, and how to make everyday meals practical, joyful and pleasantly light. These dishes can be enjoyed throughout the year and feel especially lovely in warmer months, when gentle, refreshing meals feel most comforting.
Taught by Sasi Krishnan, a regular cookery tutor at Honesty Cookery School and an experienced cookery teacher who values simple, nourishing food prepared with intention. As a mum and home - style cook, Sasi naturally advocates cooking from scratch, understanding ingredients, and enjoying dishes that support everyday life in a balanced, practical and comforting way.
